Mama’s Fried Chicken
Mama’s Fried Chicken can’t be beat! This is my husband’s most requested supper, and it’s a classic southern dish. It’s delicious hot and fresh, or packed cold for a picnic at the beach. This is one of the first things I learned to make as a teenager growing up in Savannah.
In the summers I used to visit my grandfather in Mobile, Alabama for a week. My grandmother was in a nursing home, and after visiting her each morning, I would plan what meal I would make for Papa that night. He enjoyed having home cooked meals for the week and I loved doing it for him. Fried chicken was one of his favorites and I would make it with mashed potatoes, black eyed peas, fresh sliced tomatoes, and biscuits. PREP TIME: 15 MINUTES
COOK TIME: 25 MINUTES
INGREDIENTS
• 3 lbs chicken pieces of your choice: breasts, drumsticks, or thighs
• 1 teaspoon salt
• 1 teaspoon pepper
• 2 cups buttermilk
• Self-rising flour
• Vegetable oil
DIRECTIONS
• Sprinkle chicken with salt and pepper. Place chicken in a shallow dish or zip-top plastic bag, and add buttermilk. Cover and chill at least 2 hours.
• Remove chicken from buttermilk, discarding buttermilk. Dredge chicken in the flour.
• Pour oil to a depth of 1 ½ inches in a deep skillet or Dutch oven; heat to 350 deg. Add chicken, a few pieces at a time; cover and cook about 6 minutes. Uncover chicken, and cook until turning golden brown. Turn chicken, cover and cook for 6 minutes. Uncover and cook an additional 5 minutes or until chicken is done. Drain on paper towels.
