Whether you’re whipping it up for a quick weeknight dinner or bringing it to a family gathering, this mac n’ cheese is a reliable favorite that brings warmth to your table. INGREDIENTS
• 4 cups dry macaroni
• 1 egg, beaten
• 1 stick butter
• 2 ½ cups whole milk
• 1 cup half-and-half
• ½ cup flour
• 2 heaping tsp dry mustard
• 1 lb cheddar cheese, grated
• ¼ tbsp smoked paprika
• ½ tsp salt
• ½ tsp seasoned salt
• 1 tsp black pepper
DIRECTIONS
• Cook the macaroni until very firm. Drain.
• In a small bowl, beat the egg. Preheat the oven to 350°F and butter a large baking dish.
• In a large pot, melt the butter and sprinkle in the flour. Whisk constantly over medium-low heat for 4-5 minutes.
• Add the milk, half-and-half, and mustard. Whisk until smooth. Cook for 5 minutes or until very thick, whisking constantly.
• Reduce the heat to low. To temper the eggs, slowly pour 1/4 cup of the sauce into the beaten egg, whisking constantly.
• Pour the egg mixture into the sauce, whisking until smooth. Stir in all but 1/2 cup of the cheese until melted.
• Add the smoked paprika, salt, and seasoned salt and pepper. Pour in the cooked, drained macaroni and stir to combine.
• Serve immediately or pour into the baking dish and top with the remaining cheese. Bake for 20 to 25 minutes.
COOKING TIPS & PAIRING SUGGESTIONS
Try adding cooked bacon or ham for an extra twist. Substitute the cheddar with a mix of cheeses like Gruyère and Parmesan for a different flavor!
For yesterday’s dinner, we paired this mac n’ cheese with a ham, green beans, and dinner rolls. It was a perfect combination that made for a hearty and satisfying meal.
