Easy Scrumptious Lasagna

Lasagna has always been one of my favorite dishes! Although our roots are embedded in Southern cooking, we believe that good food transcends all borders. I learned to make lasagna when I was just 16 years old, and it has evolved over the years into this simple, quick, yet mouth-watering recipe. We occasionally like to explore and share recipes from other cuisines that have become family favorites, and this lasagna is a perfect example. I hope you enjoy it!

INGREDIENTS
• Lasagna noodles
• 24 oz container cottage cheese
• 16 oz ricotta cheese
• 2 large eggs, lightly beaten
• ½ cup refrigerated pesto
• 1 teaspoon salt
• 3 cups shredded mozzarella cheese
• 1 lb ground beef
• ½ cup chopped onion
• 2 (24 oz) jars of tomato basil pasta sauce

DIRECTIONS
• Prepare noodles according to package directions. Stir together cottage cheese, ricotta, eggs, pesto, and 1 cup mozzarella cheese. Cook together beef and onion until meat is done. Stir in pasta sauce. Simmer for 20 minutes.
• Prepare lasagna: Layer 1 cup beef mixture, 3 noodles, and 2 ½ cups cottage cheese mixture in lightly greased 13 × 9 baking dish.
• Top with 2 noodles, 2 cups beef mixture, and 2 more noodles.
• Top with remaining cottage cheese mixture, 3 noodles and beef mixture. Sprinkle with remaining 2 cups mozzarella.
• Bake covered at 375 degrees for 40 to 45 minutes.
• Uncover and bake 20 minutes until cheese is browned.

Serves around 6-8.
