Mama’s Chicken Salad (for Sandwiches)

Hey y’all! Here in South Georgia the weather is already humid and hot! We eat smaller meals in the summer and chicken salad is a quick fix for lunch or a light dinner and lasts in the refrigerator for a few days. You can spread this on toasted bread, croissants or it’s delicious alone. This is a recipe my Mama made when we were growing up, and it’s still a favorite of mine!

INGREDIENTS
• 2 cups cooked chicken, chopped
• ½ cup chopped celery
• ½ cup mayonnaise
• ½ teaspoon salt
• 2 teaspoons lemon juice
• 1 teaspoon dried dill
• 1 green onion, thinly sliced (optional)

DIRECTIONS
• Combine chicken with celery and onion.
• Stir together mayo, salt, lemon juice and dill seasoning.
• Add mayonnaise mixture to chicken and stir lightly.
• Taste and season with additional salt and pepper if desired.

COOKING TIPS & PAIRING SUGGESTIONS
If you are short on time, you can use a rotisserie chicken instead of cooking it yourself!

We usually serve BBQ chips and watermelon on the side!
